Sweet Potato Salad with Corn and Chilli

Ingredients:

1kg sweet potato
Salt
Freshly ground black pepper
190ml sweet chilli sauce
65ml sunflower oil
3 spring onions, sliced
410g whole kernel corn, canned and drained

Method:

1. Boil the potatoes in water until they are just tender. Drain well.

2. Place them into a bowl. Season with the salt and pepper.

3. Mix together the sweet chilli sauce and enough of the oil to make a pourable dressing.

4. Dress the potatoes with the dressing, and stir gently to mix so as not to break up the potatoes.

5. Top the salad with the spring onion slices and corn, and a little extra dressing. Refrigerate until serving.
