Vegan Cinnamon Ice Cream with Maple-Roasted Radishes

Ingredients:

For the radishes:

1 bunch fresh raw radishes
1 teaspoon olive oil
1 teaspoon maple syrup

For the ice cream:

3 bananas, frozen
1 teaspoon ground cinnamon

Method:

1. Preheat the oven to 200 degrees Celsius.

2. For the radishes, slice them, and toss into an oven-proof dish with the oil and maple syrup. Bake for 12 to 15 minutes, or until they begin to brown.

3. For the ice cream, whiz the bananas and cinnamon in a blender or food processor, until it creates a whipped-cream-like consistency.

4. Top with the roasted radishes and serve immediately.
